Dash and a Handful Catering and Delivery is one of the first names Brides and Grooms think of when it comes to wedding catering needs. The company was founded in 2011 and named such as an homage to the mother of Executive Chef and Owner Chad Gardner because that is how she taught him to cook, "With a dash of this and a handful of that."
Dash and a Handful's classically trained French pastry artist, Chantal Carter, creates one-of-a-kind couture custom cakes and pastry delights for any special occasion. I had the pleasure of interviewing Chantal and finding out more about her and the unique cakes that she creates.
When asked what a cake tasting consists of in their bakery, Chantal said that instead of offering mix and match cake tasting, the client actually picks out three different flavor and filling combinations and they make miniature wedding cakes. By doing this, they hope to give the client an absolutely amazing experience and something unique and special.
Chantal said that the most popular flavor of cake is "Hands down, my Lavender Lemon Cake with Lemon Custard and a thin layer of Organic Berry Jam". She said it's even more popular than chocolate! She went on to say that, "We are very lucky to live in a place where there is so much amazing local citrus available and we definitely take advantage of that, using only the highest quality ingredients and organic and local every chance we get".
Chantal explained that "Sometimes couples can get overwhelmed when picking out a cake. The options are endless. Cake is very personal though and if they have no clue what they want, I will usually ask them questions about their relationship or their favorite childhood dessert as a starting point. You can draw inspiration from just about anything."
